Method
 

Preparation
  1. Heat apple cider in a medium-sized pot over medium heat and simmer until it reduces to 2 tablespoons, about 25 minutes. Let cool for 15 minutes.
  2. Set your oven to 350°F and line baking sheets with silicone baking mats or parchment paper.
  3. Use an electric mixer to beat together butter, sugar, and brown sugar until fluffy, about 3 minutes.
  4. Beat in the egg and the 2 tablespoons of cooled apple cider until well combined.
  5. In a small bowl, stir together salt, flour, cream of tartar, and baking soda, then gradually mix this into the butter mixture.
  6. In another small bowl, mix together the ingredients for the coating.
  7. Scoop dough into 1 tablespoon-sized balls, roll them in the coating, and place them on the prepared cookie sheets, about 2.5 inches apart.
  8. Bake for 10 minutes, or until the tops are golden brown. Let cool on the cookie sheets for 2 minutes before transferring them to a cooling rack.

Notes

For even more flavor, consider using fresh apple cider and let the butter reach room temperature for easier mixing. Chill the dough for 30 minutes before baking for a thicker cookie.
