Preparation
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Prepare the Greek yogurt blue cheese dressing and refrigerate to let flavors develop.
- In a large bowl, mix ground chicken, egg, Panko breadcrumbs, celery, carrot, green onion, garlic, hot sauce, salt, and pepper with a spatula until combined; do not overmix.
Cooking
- Using a small trigger scoop, form about 26 meatballs and place them on the prepared baking sheet.
- Bake meatballs for 18-20 minutes or until cooked through and lightly browned.
Serving
- Remove meatballs from the oven, transfer to a large bowl, drizzle with hot sauce, and gently toss to coat.
- Serve warm, garnished with green onion and with blue cheese dressing on the side.
Notes
These meatballs can be made ahead and are great for meal prep. Adjust spice levels by adding more or less hot sauce. They can also be adapted using ground turkey instead of chicken.
