Preparation
  1. Sift the dry ingredients: Whisk together the flour, baking soda, baking powder, ground cinnamon, and fine sea salt. Set aside.
  2. Cream the butter and sugar: In a mixing bowl, beat together the softened butter and sugar until light and fluffy.
  3. Add eggs and vanilla: Mix in the eggs and vanilla until well combined. Gradually incorporate the Instant Apple Cider Drink Mix, one packet at a time.
  4. Combine dry ingredients: Add the dry mixture to the wet ingredients and mix until just combined. Cover with plastic wrap and chill for 1-2 hours.
Baking
  1. Preheat the oven to 350°F and line the baking sheets with parchment paper.
  2. Prepare the rolling mixture: In a separate bowl, mix sugar and pumpkin pie spice for rolling the cookies.
  3. Shape the cookies: Roll about 1 tablespoon of dough into a ball, flatten it, place a caramel in the center, and wrap the dough around it. Roll in the spiced sugar before placing it on the baking sheet.
  4. Bake the cookies: Place the cookies in the preheated oven and bake for 11-14 minutes until slightly undercooked.
Cooling
