Preparation
- Brown the butter. Heat the unsalted butter in a pot until browned and nutty in scent. Chill 3/4 cup for frosting and set aside 1/2 cup for crust.
- Preheat the oven to 350°F (175°C).
- Prepare the crust. Grind the graham crackers, mix with brown sugar and melted brown butter, press into a pan, and bake for 10 minutes.
- Prepare chai infusion. Steep the half and half with chai teabags and then allow to cool.
Cooking
- Mix cheesecake batter. In a mixing bowl, combine softened cream cheese, light brown sugar, and cornstarch until smooth. Add brown butter, sour cream, vanilla, and spices. Incorporate eggs carefully.
- Bake the cheesecake. Pour cheesecake batter into the baked crust and bake for 42-45 minutes until set.
- Make brown sugar caramel. Simmer butter and brown sugar in a saucepan, whisk in cream, then add vanilla and spices.
Serving
- Prepare frosting. Beat chilled brown butter until fluffy, add cold cream cheese, then sift in powdered sugar.
- Finish the dessert. Once cheesecake is chilled, frost it, drizzle with caramel, cut into squares, and serve.
Notes
Opt for room-temperature cream cheese to avoid lumps in your batter. Chill the cheesecake thoroughly before frosting for a clean finish. Experiment with different spice blends for your chai infusion.
