Caramel Topping

Method
 

Preparation
  1. Brown the butter. Heat the unsalted butter in a pot until browned and nutty in scent. Chill 3/4 cup for frosting and set aside 1/2 cup for crust.
  2. Preheat the oven to 350°F (175°C).
  3. Prepare the crust. Grind the graham crackers, mix with brown sugar and melted brown butter, press into a pan, and bake for 10 minutes.
  4. Prepare chai infusion. Steep the half and half with chai teabags and then allow to cool.
Cooking
  1. Mix cheesecake batter. In a mixing bowl, combine softened cream cheese, light brown sugar, and cornstarch until smooth. Add brown butter, sour cream, vanilla, and spices. Incorporate eggs carefully.
  2. Bake the cheesecake. Pour cheesecake batter into the baked crust and bake for 42-45 minutes until set.
  3. Make brown sugar caramel. Simmer butter and brown sugar in a saucepan, whisk in cream, then add vanilla and spices.
Serving
  1. Prepare frosting. Beat chilled brown butter until fluffy, add cold cream cheese, then sift in powdered sugar.
  2. Finish the dessert. Once cheesecake is chilled, frost it, drizzle with caramel, cut into squares, and serve.

Notes

Opt for room-temperature cream cheese to avoid lumps in your batter. Chill the cheesecake thoroughly before frosting for a clean finish. Experiment with different spice blends for your chai infusion.
