- In a large pot, melt the butter or oil over medium-high heat.
- Add the onion, carrots, and celery and cook until tender, about 5 to 7 minutes.
- Add the garlic and cook for one minute.
Cooking
- Stir in the bay leaves and thyme.
- Pour in the chicken broth and bring to a boil.
- Add the noodles and simmer for 5 to 6 minutes or until tender but not fully cooked.
- Stir in the shredded cooked chicken and simmer for 2 to 3 minutes.
- If the soup is too thick, add more broth.
- Stir in the lemon juice, parsley, and season with salt and pepper to taste.
Serving
- Remove the bay leaves and ladle the soup into bowls.
- Serve warm.
Notes
For a perfectly balanced chicken noodle soup, don’t overcook the noodles. Consider using homemade broth for the best flavor and add extra vegetables such as peas or corn for additional nutrition.
