Method
 

Preparation
  1. In a large pot, melt the butter or oil over medium-high heat.
  2. Add the onion, carrots, and celery and cook until tender, about 5 to 7 minutes.
  3. Add the garlic and cook for one minute.
Cooking
  1. Stir in the bay leaves and thyme.
  2. Pour in the chicken broth and bring to a boil.
  3. Add the noodles and simmer for 5 to 6 minutes or until tender but not fully cooked.
  4. Stir in the shredded cooked chicken and simmer for 2 to 3 minutes.
  5. If the soup is too thick, add more broth.
  6. Stir in the lemon juice, parsley, and season with salt and pepper to taste.
Serving
  1. Remove the bay leaves and ladle the soup into bowls.
  2. Serve warm.

Notes

For a perfectly balanced chicken noodle soup, don’t overcook the noodles. Consider using homemade broth for the best flavor and add extra vegetables such as peas or corn for additional nutrition.
