Preparation
- In a large mixing bowl, whisk together cornmeal, flour, baking powder, sugar, and Kosher salt.
- Add the beaten egg and milk, mixing until just wet. Do not overmix.
- Gently fold in the corn kernels to combine evenly.
- Set the batter aside for 5 minutes to settle before frying.
Cooking
- Heat the griddle or cast iron skillet to 325 degrees F (medium heat).
- Drizzle a small amount of vegetable oil onto the cooking surface.
- Ladle 1/4 cup of batter onto the hot surface for each cake.
- Cook for 2-3 minutes per side or until golden brown.
- Remove to a warm oven and continue with the remaining batter.
Serving
- Top with your favorite toppings before serving.
Notes
