Method
 

Preparation
  1. Prepare the chicken by cutting it into bite-sized pieces.
  2. Chop the onion and mince the garlic.
  3. Rinse and drain the great Northern beans or cannellini beans.
Cooking
  1. Heat the oil in a large pot over medium heat.
  2. Sauté the diced onion and minced garlic until the onion is translucent.
  3. Add the chicken pieces and cook until no longer pink.
  4. Stir in the chicken broth, beans, corn, diced green chilies, cumin, oregano, chili powder, cayenne, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for about 20-30 minutes.
Serving
  1. Just before serving, stir in chopped cilantro, yogurt, and lime juice.
  2. Serve hot with tortilla chips, avocado slices, and extra yogurt and lime on the side.

Notes

Use fresh ingredients for better flavor. Allow chili to sit after cooking for flavors to meld. You can use pre-cooked rotisserie chicken for quicker prep.
