Preparation
- In a medium bowl, whisk together whole grain mustard, Dijon mustard, honey, olive oil, lemon juice, garlic, paprika, thyme, salt, and pepper. Reserve 1/4 cup of the marinade for brushing on the chicken.
- Pour marinade into a gallon Ziploc bag, add chicken breasts, and massage the marinade into the meat. Marinate in the refrigerator for at least 30 minutes or up to 8 hours.
Cooking
- For Grilling: Preheat grill to medium-high heat. Remove chicken from the bag, discard marinade, and grill for 5 to 7 minutes per side, brushing with reserved marinade.
- For Baking: Preheat oven to 375 degrees F, place marinated chicken in a sprayed baking dish, brush with reserved marinade, and bake for 20 to 30 minutes until internal temperature reaches 165 degrees F.
Serving
- Allow chicken to rest for 5 to 10 minutes before slicing or serving.
- Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.
