Preparation
- Preheat the oven to 350 degrees F.
- Use a meat mallet to pound the chicken breasts to an even thickness, then season with salt and pepper.
Cooking
- In a skillet over medium heat, pour in the olive oil until hot.
- Coat each chicken breast in flour, shaking off the excess before placing them in the skillet.
- Cook in batches for 3-4 minutes on each side until golden brown, then transfer to a baking dish.
- In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds, then add lemon slices and juice, cooking for 2-3 minutes.
- Pour the lemon-butter mixture over the chicken in the baking dish.
- Place in the oven and bake for 15-20 minutes until the internal temperature reaches 165 degrees F.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
Store leftover Lemon Butter Chicken in an airtight container in the refrigerator for up to three days. For longer storage, freeze cooked chicken in an airtight container for up to three months.
