Method
 

Preparation
  1. Preheat oven to 350°F and grease a 9x13 metal baking pan.
  2. In a large mixing bowl, whisk together mochiko, sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In a separate bowl, beat the eggs with pumpkin puree, condensed milk, evaporated milk, melted butter, and vanilla.
  4. Combine the wet and dry ingredients, mixing well until fully incorporated.
Baking
  1. Pour the mixture into the prepared baking pan.
  2. Bake for one hour or until a toothpick inserted in the center comes out clean.
  3. Let rest for at least one hour before slicing.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. This dish can also be frozen for longer storage.
