Preparation
- Line a baking sheet with parchment paper.
- In a bowl, mix cream cheese, granulated sugar, and vanilla until fluffy, about 2 minutes. Scoop mixture into 20 portions, flatten slightly, and freeze until solid.
- In a pot, combine diced strawberries and granulated sugar. Cook on medium heat for about 45 minutes, stirring until thickened. Cool the jam in the fridge.
Cooking
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream softened butter and sugar until fluffy, about 2 minutes. Add the egg and vanilla, mixing until pale and fluffy.
- Gradually add the dry ingredients to the creamed mixture, mixing until combined.
- Fold the cooled strawberry jam into 3/4 of the dough, leaving pockets of jam.
Serving
- Portion the dough, place a cheesecake disc in the center, and shape into discs before rolling in sugar.
- Bake 6 cookies at a time for 11-12 minutes, or until lightly golden.
- Use a cookie cutter to reshape them while warm. Cool on a rack and serve.
Notes
For added flavor, consider using a splash of lemon juice with the strawberries. Ensure your butter is very soft to achieve a smooth cookie dough consistency.
